I wasn't satisfied with the store-bought version, so I made it myself. One batch is enough to feed the whole family.

I wasn't satisfied with the store-bought version, so I made it myself. One batch is enough to feed the whole family.

Cut the eggplant and soak in water. Pick and wash the Thai basil leaves and set aside.

Cut the chicken breast, chicken carcass, and chicken blood (if using) into pieces and wash thoroughly.

Heat a pot over medium heat and add a little oil. Once hot, add the green curry paste and stir-fry until fragrant.

Add the chicken breast and carcass to the pot and stir-fry until partially cooked. Pour in the coconut milk and add water to your preferred consistency.

Add seasonings to taste, then add the eggplant. Continue cooking until the eggplant is almost done, then add the chicken blood (if using).

Once everything is cooked, turn off the heat. Add the Thai basil leaves and gently stir to combine. Ready to serve.
