Ingredients

8 servings
  • 3 cupspenne pasta
  • 1 teaspoonSalt
  • 1 tablespoonolive oil
  • for Tomato sauce: 8 medium diced tomatoes
  • 2 teaspoonchopped garlic
  • 2 tablespoonsOlive oil
  • 1 tablespoonchopped basil
  • 1 teaspoonoregano
  • 2 teaspoonred chilli flakes
  • 1/2 teaspoon black pepper
  • 2 tablespoontomato sauce
  • 2 teaspoonsalt (adjust to taste)
  • 1 tablespooncornstarch
  • 2 teaspoonsugar (adjust to taste)
  • for Vegetables:
  • 2 medium sliced carrots
  • 1 cupchopped bell peppers
  • 1/2 cupchopped broccali /cauliflower
  • 1/2 cupchopped onion
  • 2 tablespoonsolive oil
  • 1 teaspoonSalt
  • 7 cup boiled pasta
  • for Preparing Pasta:
  • 6 cupPasta sauce
  • 3 cupsauted vegetables
  • 2 tablespoonsOlive oil
  • 1 tablespoonchopped basil
  • 1 teaspoonred chilli flakes

Steps

    In a large pot boil the water with salt and oil.

  2. 2

    After water comes to the boil add the pasta.
    Cook the pasta until it is just tender, not too soft. Drain the water and set pasta aside.

  3. 3

    Mix the cornstarch in ¼ cup of water and keep aside.

  4. 4

    Boil enough water and add the tomatoes. Let it get cooked for 2-3 mins till you see the outer skin peeling off.

  5. 5

    Switch off, cool down and peel of the skin, trim the edges and puree it to a fine paste(no water to be added).Keep aside.

  6. 6

    Heat oil, add garlic and fry till lightly browned.Then add the tomato puree.Allow it to boil for 3mins.

  7. 7

    Then add 1/2 cup water and allow it to boil for atleast 2mins.

  8. 8

    Now add cornstarch,add oregano, black pepper powder,chilli flakes,basil, tomato sauce,salt and sugar.

  9. 9

    Give a quick stir and allow it reach a sauce consistency.Your pasta sauce is ready

    Heat the oil in a skillet over medium high heat.
    Add vegetables to skillet and sauté until they are nearly tender.

  11. 11

    Now assembleing pasta ; Heat the oil in a saucepan and add basil and chilli flakes stir for few seconds.

    Next add the drained pasta and sauté for a minute.

  13. 13

    Pour the vegetable and sauce over the pasta, mix well until pasta is well coated with sauce.

    Serve hot.
