Ingredients

  1. 4 cupsAll purpose flour
  2. 1 tspdry yeast
  3. 1/2 cupwarm milk
  4. 2 tspsugar
  5. 1 pinchsalt
  6. 2 tspsoft butter
  7. 1 cupwarm water to make the dough
  8. 1 tbspmore milk to brush the fatayer
  9. For stuffing
  10. 1& 1/2 cup feta cheese
  11. 2 tbspchopped parsley
  12. 1 tbspchopped mint
  13. 1/2 tsporegano/thyme

Cooking Instructions

    In half cup of warm milk add sugar and yeast. Keep aside for 5 to 8 minutes to activate the yeast.

    In a big mixing bowl pour flour and add salt and butter. Mix well.

    Make a hole in the centre of the flour and pour the activated yeast.

    Mix slowly with a spatula to incorporate.

    Now slowly add warm water to make a soft dough. Don't add all the water at a time. Add slowly and mix. You may not need all the water to make the dough.

    Now knead the dough for 5 minutes. Rub some oil to the dough and cover it. Keep it in a warm place for an hour or till the dough becomes double in size.

    In the meantime make the filling. Mix feta cheese with chopped parsley, mint and oregano/thyme and keep aside.

    After an hour take out the dough in a work place or kitchen platform and knead well by stretching and folding method for 10 minutes. This will help to make a soft pastry.

    Divide the dough into half. Take the 1st half and roll into a rectangle 1/2 inch thick sheet.

    Spread half of the filling over the sheet and roll it to form a log.

    Cut the log in to 1.5 to 2 inches length, or less according to your choice. Brush with milk.

    Using a wooden stick or back side of a ladle make an indentation or dent in the middle of each piece.

    Pre heat the oven at 200 degree Celsius for 10 minutes.

    Place each piece of fatayer in a baking tray and place them in the middle rack of the oven.

    Bake them for 20 to 25 minutes or till golden brown.

    Let them cool down and enjoy.
