Polish brinjal with little oil all around and roast on gas flame. Keep it turning to cook evenly. It will take about 7 to 8 minutes.

When done keep it in a pot and cover for 2 minutes with a lid. It will help remove peels from brinjal all around.

Now clean brinjal removing it's peels properly and mash with masher in a bowl.

Chop onions tomatoes and green chillies and grate ginger

In a wok heat oil, put onions in it and fry till light golden. Now add kashmiri mirch powder and mix so that it releases it's colour in oil. Now add grated ginger. Stir. Add chopped tomatoes and green chillies. Cook to soften tomatoes and add boiled peas and mashed brinjal.

Add salt to taste. Mix well, cover and cook for 3-4 minutes. Stir

Pour 1 tbsp ghee and sprinkle chopped coriander. Serve hot with roti or parantha.
