Cooking Instructions

Boil the sweet potato. deskin, mash and let cool a bit in a bowl

Preheat the oven to 200 degree celcius
- 3
Mix the flour and baking powder in a bowl, rub in margarine using your fingers

Stir in the sugar and sultanas.then add milk a little at a time while mixing to a stiff dough with a fork. Be careful not to overmix as that can make the scones 'tough' (not soft and crumbly as they should be).

Add the mashed sweet potato and mix in well till no lumps are felt

Turn dough onto a floured surface and roll out to about 1/2 inch thick.

Cut into heart shape or rounds (as the traditional ones)using a cookie cutter

Brush with melted butter /margarine on the surface(optional)

Place on baking tray and bake for about 10 minutes, or until scones are risen and golden

Let cool and store airtight

I like both scones and sweet potatoes, so I made this. Adding in cinnamon sugar changes the flavor and gives you another taste to enjoy. I got this idea from Cookie Shias' "Sweet Potato Milk Boil American" ID: 1377062.Please add more soy milk in Step 4 until it forms into one lump. When freezing the dough, cut it after letting it sit once in the fridge and store it to make it convenient to use. Please let sit for about 10 minutes to return it to room temperature and then bake.
