Ingredients

10 minutes
3-4 servings
  1. For the wadas batter –
  2. 1 cup dry lightly,roasted semolina(sooji),
  3. 2 tbspgram flour
  4. 2 tsp mint-coriander paste
  5. 1 tspginger-green chilli paste
  6. 1 tsplemon juice
  7. 1 tspsugar
  8. 1/2 tspsalt
  9. water or sour curd as required
  10. 1 tspfruit salt
  11. To serve with -2cups thick beaten curd,
  12. 2 tbspsoil to grease the moulds and for tadka
  13. 1 tspmustard seeds,
  14. few curry leaves,
  15. 1whole red chilli
  16. salt and sugar and red chilli powder to taste,
  17. tadka
  18. For garnish- tadka,coriander leaves chopped tomatoes diamonds,capsicum diamonds,American corn and tomatoes flowers and serve cold
  19. Greased aluminium ring moulds

Steps

  1. 1

    Combine roasted semolina with all the batter ingredients except fruit salt and water or sour curd.Add the water or sour curd as required to make a smooth thick batter. Add the fruit salt and mix gently.

    Pour prepared batter, immediately into the greased small ring moulds and cook in the steamer for 7 minutes.Remove the moulds from the steamer and keep aside.

  3. 3

    Heat the oil for the tadka, add the mustard seeds, whole red chilli,and curry leaves and pour half of tadka over the beaten curd.Add salt and sugar to the beaten curd.

  4. 4

    Pour the beaten curd in a bowl. Arrange steamed semolina wadas over seasoned half of curd.Cover with remaining seasoned curd.

  5. 5

    Decorate steamed semolina wadas with remaining tadka, whole red chilli, chopped tomatoes diamonds,capsicum diamonds,American corn and tomatoes flowers and serve cold.

  6. 6

    Note-healthy, non fried Semolina steamed Dahi wadas are ready.
