Preheat oven to 350 degrees. In a large bowl, whisk together flour and baking soda and sift; set aside

In another bowl, cream the butter, both of the sugars, and the honey with a whisk; try not to allow too much air to enter the mixture. Add the vanilla essence and eggs and mix well. Add the flour mixture; mix until just combined. Stir in the chocolate chips.

Use an ice-cream scoop to drop balls of dough about 2 inches apart on baking sheets lined with parchment paper.

Bake until the cookies are golden around the edges, but still soft in the center, 12 to 15 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.
