  1. 2 Purple Eggplant
  2. as neededFor deep fry - vegetable oil
  3. for the batter :-
  4. 4 tbspAll purpose flour
  5. 2 tbspGram Flour
  6. 1 tbspRice flour
  7. 1 tspRed Chilli powder
  8. 1/2Turmeric powder
  9. to tasteSalt
  10. 1 tspNigella seeds
  11. 1 tspPoppy seeds
  12. as neededWater

    Cut the eggplant into long and thin pieces.

  2. 2

    To make the batter, add all the gram flours, chilli powder, salt, turmeric powder, Nigella seeds and water in a bowl.

  3. 3

    Mix them very well with a spatula and make a smooth and thick batter.

  4. 4

    Heat sufficient oil in a frying pan for deep frying.

  5. 5

    Put the eggplants into the batter and coat them very well..

  6. 6

    When the oil is heated, put the batter coated eggplant into the oil and fry them on medium to low heat until they become golden brown.

  7. 7

    Drain oil and place them on plate.

  8. 8

    Sprinkle some chat masala or black salt serve hot.
