Ingredients

  • 3beetroots peeled and chopped
  • 2-3small onions quartered
  • I teaspoon crushed garlic
  • I -2 tablespoons olive oil
  • Couple of sprigs or fresh oregano (thyme works well too)
  • Parsley for garnish

Steps

  1. 1

    Heat oven to 180 degrees C.

  2. 2

    Peel and chop beetroot into bite-sized chunks. Add to an oven tray.

  3. 3

    Quarter onions and sprinkle amongst the beetroot

  4. 4

    Add chopped garlic and oregano leaves

    Add olive oil and gently mix

  6. 6

    Bake in the oven for 30-40 minutes

  7. 7

    Garnish and serve
