Mix-match
It's something my uncle and dad used to cook for me when I was little.
Steps

Slice the garlic as tiny as possible. Clean and slice the peppers in pieces (not too big). Chop the tomatoes(if you have fresh ones).

Put the pot on the pre-heated stove, put some oil and fry the garlic until it changes its color to golden. Be careful to not let it burn. Mix occasionally.

Put the peppers. Mix well. Put on a lid but try to mix occasionally. They'll shrink a bit and will get softer.

When the peppers are almost done, put the tomato pieces. Not too early or else the peppers won't cook well. Mix and let simmer for a while until the tomatoes get soft.

Meanwhile make the mix of the eggs and the cheese. You have to mash the cheese with fingers to crumbs. Mix with the eggs. Put in the pot when tomatoes get soft.

Mix and let simmer for some more time until it all gets thicker.

May or may not add some parsley on top when served.
