Ingredients

20 minutes
3 servings
  • For kachori dough:..
  • 1 1/2 cupmaida
  • 1/2 cuprava
  • 1/4 tspbaking soda
  • 1/2 tspsalt
  • 2 tbsphot oil
  • 1/2 cupwater to knead
  • as neededoil for frying
  • for chaat:
  • 1potato boiled & peeled
  • 1/2 cupchickpea / chana soaked & boiled
  • 1/2 cupgreen moong dal soaked & boiled
  • 1/2lobia soaked and boiled
  • 2 cupcurd
  • 1/4 cupgreen chutney
  • 1/4 cuptamarind chutney
  • 1 tspkashmiri chilli powder
  • 1 tspcumin powder
  • 1 tspchaat masala
  • 1 tspaamchur
  • 1 tspsalt
  • 1/2 cupsev
  • 1/2 Cuppomegranate seeds
  • 1/4 cupboondi
  • 2 tbsponion finely chopped

Steps

20 minutes
  1. 1

    Firstly in a large mixing bowl take 1½ cup maida, ½ cup rava, ¼ tsp baking soda and ½ tsp salt. mix well.pour 2 tbsp of hot oil over flour and crumble.

    Add water as required and knead 5 minutes.add in water as required and knead 5 minutes.

    Prepare smooth dough by adding required water.

  4. 4

    Now pinch a ball sized dough, and flatten it.
    grease the ball with oil to prevent from sticking.
    roll slightly thick like poori using a rolling pin.
    drop the rolled kachori into the hot oil.
    splash oil gently over the poori and press with the spoon to puff up.
    flip over and fry the kachori until golden.

    Drain off the kachori over kitchen paper allowing to cool completely.

  6. 6

    Firstly take a poori and make a hole. poori turns crisp once cooled completely.
    stuff with 1 tbsp boiled potato, 1 tbsp boiled chana and 2 tbsp boiled moong dal.

  7. 7

    Now pour 2 tbsp curd.
    Now pour a tsp of green chutney and tamarind chutney.
    Also sprinkle chilli powder, cumin powder, chaat masala, aamchur and salt.

  8. 8

    Further drizzle half tsp of curd, green chutney and tamarind chutney.
    Garnish with 2 tbsp sev, 1 tbsp boondi, 1 tbsp pomegranate and 2 tsp onion.

    Finally enjoy Raj kachori immediately with golgappas pani.
