Ingredients

  1. 750 gmMutton (prefer shoulder)
  2. 2Onions sliced
  3. 2Tomato chopped
  4. 2 tbsp ginger garlic paste
  5. 1 tspRed Chilli powder
  6. 1 tbspDhania powder
  7. 1 tbspZeera powder
  8. 1 tspHaldi powder
  9. to tasteSalt
  10. 1 tspBlack pepper
  11. as neededOil
  12. 1 tbspRed Chilli powder
  13. leavesFew curry
  14. 2 tbspTamarind paste
  15. 1 cupThick Coconut milk
  16. 1 tspZeera whole
  17. 1 tspcurry masala powder to be grounded
  18. 100 grmsCashew
  19. 50 grmsRoasted Peanuts
  20. 100 grmsRoasted chana dal(putane ke dal)
  21. 50 grmsSesame seeds
  22. 2Cloves
  23. 1/2 tspFennel seeds
  24. 3-4Black pepper
  25. 1"Cinnamon stick
  26. 4-5Star anise
  27. 3Red chillies dry
  28. 1/2 tspDry ginger

Steps

  1. 1

    First make the Kaari masala.

  2. 2

    Dry roast all the whole spices. Roast the peanuts, sesame seeds and chana dal too

  3. 3

    In a mixer all all the Curry masala ingridents and grind to a fine powder

    Take the mutton pcs add the ginger garlic paste salt and pepper, onion and tomatoes and other dry spices and boil the mutton till 6 vessels

    Take oil in a big pot and add the zeera

    Add the red chilli powder

    Add 250 grms of the Curry masala prepared

    Fry the masala till it turns golden and nice aromas spreads

    In the masala add the mutton stock along with the pcs

    Add 2 tbsp tamarind paste

    Add coconut milk

    Let the curry simmer for 30 to 45 mins

  13. 13

    Enjoy the Kaari with khamiri roti and rice
