Slice the pork chops into 1/2-inch thick pieces. Marinate with five-spice powder, soy sauce, fish sauce, minced shallots, minced garlic, minced lemongrass, sugar, vegetable oil, and honey. Let the pork marinate for 30 minutes to absorb the flavors. Then grill at 400°F (200°C) for 15 minutes. Flip the pork and grill for another 10 minutes.

Wash the cucumbers and tomatoes, then slice them.

Chop the green onions and sauté them in oil with the pork cracklings.

Mince the garlic and chili peppers to make the dipping fish sauce. Mix with sugar and adjust the saltiness and sweetness to your taste.
