Ingredients

  1. 10potatoes
  2. 3 tbspbutter
  3. 1/2 cupcream or milk
  4. to tastesalt
  5. 2 tbspolive oil
  6. 1large onion,finely chopped
  7. 3garlic cloves
  8. 8 ozmushrooms, sliced
  9. 30 ozlentils cooked in their water
  10. 2 tbspred wine
  11. 1 tbspsoy sauce
  12. 3 tspItalian seasoning
  13. 1/2 tspthyme
  14. 3 tbspcornstarch
  15. 10 ozspinach

Steps

  1. 1

    Cook and mash the potatoes with butter, milk and salt

  2. 2

    Preheat oven to 400°F

  3. 3

    Saute the onion in the olive oil til translucent.

  4. 4

    Add garlic and mushrooms and cook til onion is golden

  5. 5

    Add lentils and their liquid and bring to a simmer. Stir in wine soy sauce and seasoning and cook for 5 min

  6. 6

    Add cornstarch

  7. 7

    Add spinach and cook til wilted then add to caserole dish. Top with mashed potatoes

  8. 8

    Bake 30 to 35 min then let stand 5 min before serving
