Ingredients

  1. 50-70 gSugar of your choice (raw, refined, cane, coconuts etc) or 1 litre of fruit juice (no artificial sweeteners)
  2. 1 litreFiltered water (When using fruit juice, not needed)
  3. 3-4 tbspwater kefir grains
  4. Fruits for the second fermantion
  5. Second Fermentation Suggestions:
  6. Juice of 1/2 Lemon and Root ginger (size of a pound coin cut into small pieces) for lemon and ginger water Kefir Soda
  7. Raspberries
  8. Blueberries

Steps

    Wash all equipment, make sure all soap is completely rinsed off.

  2. 2

    Dissolve the sugar in water by stirring (heating not required)

  3. 3

    Place the water Kefir grains into your fermenting container and add the sugar water or fruit juice.

  4. 4

    Close lid or cover with cloth/ rubber band and leave to ferment for 24 to 48 hours in a warm, dark place. The warmer the environment the faster the process. Once fermented you will notice a change in smell and taste. It may not be fizzy yet, leaving it out for secondry fermentation will help add fizz.

  5. 5

    After fermentation, strain to speparate the grains. Keep the water Kefir grains in another sugar water. You can keep them sugary water.

  6. 6

    Pour the water Kefir into airtight bottles and add any additional fruits or flavouring. Then leave them in a dark place for a further 24-72 hours for the second fermentation which will produce carbonation. Replace fruits every 24 hours until you get the desired carbonation. When ready, chill it and serve.
