Ingredients

4 servings
  • 1 lbskinless boneless chicken, cut to bite-size
  • 1/4 tspsalt
  • 1/4 tsppepper
  • 2 tspcanola oil
  • 1onion, chopped
  • 1red bell pepper, chopped
  • 1yellow bell pepper, chopped
  • 2 tspfresh ginger, grated
  • 4garlic cloves, minced
  • 3/4 cupscoconut milk, reduced fat
  • 1 tbspThai red curry paste
  • 1 tbspdark brown sugar
  • 2 tsplime juice

Steps

  1. 1

    Season chicken with salt and pepper. Heat oil in large skillet, cook chicken until cooked through. Transfer chicken to plate, leaving juices in pan.

    Add peppers, onions, ginger, and garlic

  3. 3

    Add coconut milk, curry past, sugar, and lime juice. Bring to a boil, reduce heat and simmer until mixture begins to thicken, ~5 minutes.

  4. 4

    Return the chicken to pan and continue simmering until chicken is heated through.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
