Garden egg sauce with sprinkles of ugwu leaves

Cook your garden egg till its tender.

Then transfer to a bowl and pour tap water to cool it and also for easier removal of the peel.

After the removal of the peel, mash the garden egg together. You can add a little salt or pinch of salt.

Heat your palm oil gently. Then add diced onion and allow to fry slightly. Afterwards, add your ground pepper and allow to fry. Then add your smoked fish, ponmo, iru. Add salt if necessary. Allow to simmer.

Then add in your mashed garden egg. Adjust salt if necessary. Allow to simmer for few minutes. Finally add your shredded ugwu leaf and allow to simmer for 2 to 3 minutes.

Serve with hot boiled yam/plantain.
