In a mixing bowl take maida/ wheat flour, salt and ghee mix nicely with hands

With help of warm water make soft dough cover and keep aside

Heat oil in a pan, add coriander cumin ajwain fennel seeds saute for 1 minute add pepper corn heeng ginger green chilli saute for i minute then add amchur red chilli powder both salt and garam masala powder saute for a minute add besan saute till besan is fried add strained urad daal and saute till done.Add kasoori methi.Let cool the masala and coarsely grind do not grind too much.

Heat plentyof oil in a kadai for deep fry and put 1 tsp oil over the dough and again knead it, make small balls give shape of katori to each ball fill with urad masala, close the katories and flatten with the palm do not press much

Now fry the kachories in hot oil over low flame flip 2-3 times when brown from both sides take them out

Enjoy with any subji or chutney of your choice
