Ingredients

Serves 2 servings
  1. 4 1/2 ozblanched raw almonds (you can buy them already ground, since you'll need to blend them)
  2. 2 2/3 ozbread (preferably just the soft inside part)
  3. 2 cupscold water (about 1/2 liter; adjust depending on how thick you want the soup)
  4. 1garlic clove (use half for a milder flavor)
  5. 3 1/2 tablespoonsextra virgin olive oil (50 ml)
  6. 1 tablespoonvinegar
  7. 1 pinchsalt (or to taste)
  8. For garnish
  9. Seedless grapes, to taste
  10. Diced ham, to taste

Steps

  1. 1

    Soak the bread in cold water.

  2. 2

    In a blender, combine the almonds, drained bread, water, garlic, vinegar, and salt. Blend well.

  3. 3

    Slowly add the olive oil while continuing to blend.

  4. 4

    Chill in the refrigerator.

  5. 5

    When ready to serve, garnish with grapes and diced ham.
