Ingredients

  • 1onion, coarsely chopped
  • 3garlic cloves, chopped
  • 1tomato, chopped
  • 4 Tbspbasil
  • 1orange or yellow pepper, chopped
  • 4 cupskale or collard greens (can use frozen or chop up fresh)
  • 3eggs
  • 1 cuprice flour (if desired)
  • 3 lbsground beef or ground turkey (I use a mixture of both)
  • 1 lbbacon or turkey bacon

Steps

  1. 1

    Sautee the onion and garlic for 5 minutes in the oil of your choosing. Add the bell pepper and sautee for 5 more minutes. Add the kale or collard greens and sautee for 1 more minute.

    While that's cooking, chop up the bacon or turkey bacon and sautee for 5 minutes.

  3. 3

    Place all the other ingredients into a bowl, then add the vegetables that you just cooked. Mix them together, put them into 2-3 9x11" baking pans.

    Bake at 375 degrees for 30-40 minutes, until cooked through the center and a little crispy on the outside.
