Ingredients

3-4 servings
  1. 250 gmsBaigan/ brinjal
  2. 4-5Potatoes
  3. 3onions
  4. 4tomatoes
  5. 2 tbspginger garlic paste
  6. 4green chillies
  7. 3-4cloves, pepper
  8. 1cinnamon stick
  9. 2bay leaf
  10. 1 tspturmeric powder
  11. 2 tspdhaniya jeera powder
  12. 1 tspgaram masala powder
  13. 1 tspjeera
  14. 1 pinchhing
  15. 2 tspred chilli powder
  16. to tasteSalt
  17. as neededOil
  18. as neededFresh grated coconut
  19. as neededcoriander leaves finely chopped

Steps

20 minutes
  1. 1

    Heat oil, add jeera, hing, cloves, pepper, bay leaf, cinnamon stick, chillies, ginger garlic paste, onions, tomatoes.

    Cook well. Add the dry masalas.

  3. 3

    Let the oil separate from sides.

  4. 4

    Add the chopped Baigan-aaloo. Cover and cook for sometime.

  5. 5

    Add salt and little water to cook.

  6. 6

    When done remove from heat and transfer in serving bowl and garnish with coriander leaves and fresh grated coconut.
