Grate the tomato and dice the onion into small cubes. Set aside for later use.

Slice the eggplants into thin strips. Grease a baking sheet with oil or line it with parchment paper for best results, then arrange the eggplant slices on it.

Bake at 350°F (180°C) until the eggplant is tender, keeping an eye on it so it doesn't burn.

Once heated, add the spices and tomato paste, and stir well until the tomato liquid evaporates and the mixture thickens slightly.

Let it cool a bit. Meanwhile, make the filling by sautéing the tomato and onion in a skillet with oil.

Place about 1/2 teaspoon of the tomato-onion mixture and some mozzarella cheese on each eggplant slice, then carefully roll it up so it doesn't tear.

Place the rolls in a very hot oven for 5 to 8 minutes until the cheese melts and the eggplant cooks a bit more.

After removing from the oven, sprinkle with more mozzarella and garnish with parsley, dried cilantro, or oregano. Serve and enjoy.
