Make a broth by simmering chicken leg bones in water.

Remove the chicken bones from the broth.

Prepare all the ingredients.

Arrange the pork and beef slices.

Thinly slice the onion and set aside with the sesame oil.

Heat a pot and add sesame oil. Sauté the garlic and onion until fragrant.

Add the pork and beef slices and stir-fry until about 80% cooked.

Remove the meat and set aside.

Keep the juices left in the pot from stir-frying the meat.

Pour in the broth, then add the meat and your favorite hot pot ingredients. Season with salt and cook until everything is done. Since the pot has the stir-fried meat juices at the bottom, add broth as needed and top up with hot water to avoid the soup becoming too rich or heavy.
