I didn't have fresh oregano or rosemary so I used about half a teaspoon of dried rosemary and oregano though I would recommend using fresh herbs instead. Again the quantities here are just a rough estimate of what I used.

Ingredients

  • 100 gMixed olives with pits
  • 1garlic clove, peeled and crushed
  • stripsCouple of lemon peel
  • 1 tsplemon juice
  • A fewsprigs of fresh thyme
  • 1fresh red chilli
  • A fewsprigs of rosemary
  • A fewsprigs of oregano
  • 50 mlolive oil

Steps

  1. 1

    In a small saucepan heat the olive oil over a medium heat.

  2. 2

    Add all the ingredients expect the olives and fry for 2-4 minutes, being careful not to burn the garlic.

  3. 3

    Turn heat off and add the olives and mix well.

  4. 4

    Empty into a serving bowl and enjoy.
