Ingredients: 100 g Mixed olives with pits; 1 garlic clove, peeled and crushed; strips Couple of lemon peel; 1 tsp lemon juice; A few sprigs of fresh thyme; 1 fresh red chilli; A few sprigs of rosemary; A few sprigs of oregano; 50 ml olive oil

I didn't have fresh oregano or rosemary so I used about half a teaspoon of dried rosemary and oregano though I would recommend using fresh herbs instead. Again the quantities here are just a rough estimate of what I used.

A fewsprigs of fresh thyme
1fresh red chilli
A fewsprigs of rosemary
A fewsprigs of oregano
50 mlolive oil

Steps

In a small saucepan heat the olive oil over a medium heat.

Add all the ingredients expect the olives and fry for 2-4 minutes, being careful not to burn the garlic.

Turn heat off and add the olives and mix well.

Empty into a serving bowl and enjoy.
