September is the patriotic month in Mexico. Stuffed peppers are a tradition.

Clean the peppers well and either boil them briefly to remove the skin or roast them. Place them in a plastic bag to sweat and make them easier to peel.

Once cleaned, with seeds and stems removed, stuff them with a tablespoon of beans and cheese.

Blend the tomatoes, garlic, onion, and salt very well. Cook the mixture, and once the sauce is cooked, add the sour cream. Mix well.

Arrange the peppers in an oven-safe dish, pour the sauce over them, and add more cheese.

Bake until the cheese is melted and bubbly.
