This wonderful frittata is delicious both in summer and winter. If you love potatoes, it's perfect! You can serve it as a main course or for dinner.

Peel the fresh potatoes.

Cut the potatoes into sticks and place them in water.

Drain the potatoes.

Heat oil in a nonstick skillet, add the potatoes, and cook them until tender.

Once the potatoes are cooked, beat two eggs with salt. Pour the eggs over the potatoes in the skillet and add a little fresh mint for flavor. Cook until the bottom is set.

Flip the frittata, beat the remaining egg with a pinch of salt, and pour it on top. Return the skillet to the heat. Once cooked, flip the frittata again and place it on a serving plate. Garnish with mint leaves.
