So let me share a simple South Indian breakfast recipe of Upma where I substituted semolina (sooji) with millet. I also added some veggies for a wholesome meal. You can serve with pickle or coconut chutney.

Ingredients

  1. 1/2 cupfoxtail Millet / Kangni
  2. 1 cupchopped assorted veggies (beans, carrot, peas, flat beans, etc), chopped
  3. 2 tbsp.oil
  4. 1 tsp.mustard seeds
  5. 1 sprigcurry leaves
  6. 2green chillies, slit
  7. 1 tsp.urad dal (split black gram lentil)
  8. 1 tsp.ginger, grated
  9. 1onion, chopped
  10. to tastesalt
  11. 1 tsp.sambar powder
  12. 1/2 tsp.turmeric powder
  13. 1 tsp.ghee
  14. 1 tbsp.coriander leaves, chopped

Steps

  1. 1

    Soak the millet in sufficient water for 1-2 hours. Wash well and drain. Keep aside. Heat oil in a pan and temper with mustard seeds.

    After it stops spluttering, add the curry leaves, urad dal, green chilies, ginger and onion. Saute till the onion turns translucent.

    Add all the chopped veggies, salt and turmeric powder. Mix well and cook, covered till the veggies are soft.

    Add the drained millet,

    2 cups water and sambar powder. Cover & simmer till the millet is cooked and the moisture is all absorbed. Switch off the flame and add ghee. Stir and garnish with coriander leaves.

    Serve with coconut chutney or pickle.
