This is one of our family's favorite dishes, especially on cloudy or cold days.

Cook the beef shank with the corn (cut into 3 pieces each), epazote, 1/2 onion, 2 cloves of garlic, and salt.

Wash and peel the potatoes, carrots, and chayotes. Cut them into cubes. Slice the green beans into strips.

Clean the ancho chiles, wash them, and soak them in hot water. Set aside.

When the meat and corn are cooked (about 40 minutes after the pressure cooker starts), add the vegetables.

Blend the soaked chiles very well with 1/2 onion and two cloves of garlic.

Strain the mixture into the beef broth, adjust the salt, and cook the vegetables to your desired doneness. Serve with lime juice and finely chopped onion.
