Butterfly Pea Mango Sticky Rice

I had some mangoes and was craving mango sticky rice, so I made a quick version using the microwave. You can enjoy it right away without waiting long! 😊
(This recipe is mildly sweet. Feel free to add more sweetness if you like. Personally, I prefer it less sweet since the mango is already sweet.)
Butterfly Pea Mango Sticky Rice
I had some mangoes and was craving mango sticky rice, so I made a quick version using the microwave. You can enjoy it right away without waiting long! 😊

First, rinse the sticky rice thoroughly until the water runs clear. Mix concentrated butterfly pea flower water with hot water and soak the rice, making sure it’s fully submerged, for 15-20 minutes.

Drain the water, then add more hot butterfly pea flower water just to cover the rice. Cover with plastic wrap and microwave for 3 minutes. Stir the rice, cover again, and microwave for another 1 1/2 minutes.

Mix coconut cream with concentrated butterfly pea flower water, add stevia sugar and salt, and stir until combined. Microwave for about 1 1/2 minutes until hot. Pour over the cooked sticky rice, stir to combine, then cover and let it sit for a while so the rice absorbs the coconut mixture. This will give you soft, beautiful sticky rice.

Spoon the sticky rice into silicone molds as desired, top with toasted almonds, and serve with sliced mango. Enjoy this easy, quick treat!
