Viazi karai with Chilli-Ukwaju Sauce

My mother never liked us eating/buying road side foods when growing up in Mombasa, for her own reasons🤔🤔🤔. This made her learn how to make all the foods and snacks that made us run to buy, eg mahamri, viazi karai, ladu, kashata, barafu, mabuyu, kaimati/mitai..... name them. So we had to learn to cook too😎😎😎. And viazi karai are the family's best anytime "food" and snack😉😉😉.

Ingredients

6 to 10 serving
  1. 1 kgpotatoes boiled & peeled,
  2. 100 ggaram flour
  3. 200 gwheat flour
  4. Salt, egg yellow food color, water
  5. Ukwaju
  6. 1teaspoonful turmeric
  7. 3-5 clovesgarlic to add to the flour paste
  8. 3-5 clovesgarlic to add to the ukwaju and small piece of garlic
  9. Note:-Remember to pound the garlic and ginger to a smooth paste

Steps

    Mix all the dry ingredients plus garlic and add water to make a soft like pancake paste

    Cut the potatoes into small sizes and add to the paste

    Start dropping one by one making sure they are well covered by the paste and Deep fry till crunchy.

    Soak the Ukwaju / Tarmarind in water and make thick juice from it, sieve to remove the seeds and any other particles. Then add onions, crushed garlic, crushed ginger, salt to taste, a little sugar to cut the source taste of ukwaju, you can add chilli if you are a fun. Put them all in a sufuria and boil till you are okay with the consistency of the sauce. Leave it to cool.

    They are now ready to be served with the sauce and a beverage of your choice. Note:-Serve hot with either kechup, tomato sauce, Ukwaju / tamarind sauce or Chutney. I enjoy most with chilli ukwaju with chutney.
