Whipped together with some previously made & frozen gnocchi. Very simple & tasty.

Ingredients

  1. 3-4large handfuls of gnocchi
  2. Handfulsage leaves
  3. Butter for frying
  4. Parmesan shavings
  5. 1Delicata Squash or other locally available squash

Cooking Instructions

  1. 1

    Chop the squash and boil until cooked through

  2. 2

    Pick some fresh sage leaves and fry in butter at medium heat

  3. 3

    Pop the gnocchi into boiling water, cook until the pieces float on top

  4. 4

    Blend the squash and sage together, add some olive oil and salt and pepper

  5. 5

    Mix the purée and gnocchi together, top with some Parmesan 😊
