Jalapeño pepper corn muffins with cheddar corn muffins. I split the two boxes up because it is easier to proportion out the mix evenly.
Steps

Preheat the oven 375 degrees Fahrenheit

Mix the first batch of corn muffin mix spray the muffin pan with nonstick spray.

Add 1 tablespoon to the bottom of all 12 holes.

Add half of the shredded cheese to the top of each hole.

Mix the second box of corn muffin mix. Add half the mix to half the muffin holes.

Dice the jalapeño peppers. Add to the second half of the holes of the muffins.

Add the rest of the mix to the tops of the jalapeño six holes.

Add a slice of jalapeño peppers to the top of the ones with the diced jalapeño peppers. Add the rest of the cheese to the top of all the muffins.

Bake 20-25 minutes.
