Ingredients

  • 10-15Cherry tomatoes
  • 5 tbspExtra virgin olive oil
  • 10 clovesGarlic chopped
  • as neededBaguette
  • to tasteSalt
  • 6-7Basil leaves
  • 4 tbspMozzarella cheese grated

    Preheat oven to 400°F

  2. 2

    Heat olive oil in a non-stick pan. Add garlic and saute on high heat until lightly browned.

  3. 3

    Add cherry tomatoes and salt and stir. Cover and cook till soft.

  4. 4

    Cut the baguette diagonally into thick slices. Arrange the bread slices on a backing tray.

  5. 5

    Drizzle a little olive oil over them. Spread the tomato mixture and mozzarella cheese over the bread. Place basil leaves over the cheese. Drazzle some more olive oil over the slices.

    Keep the tray in the preheated oven and bake for 8 minutes or till the cheese melts..Then serve hot.
