Ingredients

  1. 1large rack of ribs
  2. 300 gketchup
  3. to tasteSalt
  4. to tasteChilli flakes
  5. to tasteGround black pepper
  6. 60 mldark soy sauce
  7. 60 gsoft dark brown sugar
  8. 1small onion, finely chopped
  9. 1garlic clove, minced
  10. 2 tbspolive oil

Steps

    Heat the oven to 160c.

  2. 2

    Over a medium heat fry the onions and garlic in the olive oil. Fry the onions until soft.

    Add the chilli and sugar and cook for about 2-3 minutes or until the sugar has melted.

    Add the ketchup and soy sauce a stir well. Reduce heat slightly and allow to simmer for 10-15 minutes, until the sauce thickens.

    Line a deep baking tray with foil and add the ribs. Season with salt and pepper.

    Cover the ribs with the bbq sauce.

    Cover the tray with foil and transfer to oven. Cook for 2 hours to 2 hours and half. Remove the foil for the last 30-45 minutes.

  8. 8

    Allow the ribs to rest for 15 minutes to cool down enough to handle.

This recipe is fabulous! I tweaked it slightly by leaving out some of the ketchup and adding tinned tomatoes, only because I wanted a greater quantity of sauce. I lost some of the stickiness, but it still tastes delicious! Only made it the other day, and I'm making it again today with chicken. 10 out of 10 Andrea!
