Marinade the pork steaks with salt, pepper, wine, chilli, bay leaf and the garlic. Allow to sit in the marinade for at least 30 minutes.

In a frying up over a medium to high heat add the lard or olive oil.

Once the lard or olive oil is hot add the steaks drained for the marinade (reserve the marinade to add to the pan). Allow to cook 3-6 minutes on each side depending on the thickness or until fully cooked through.

Remove the steaks from the pan but keep warm.

Add the marinade and the margarine to the pan and bring to the boil cook for 10 minutes or until the sauce has thickened.

Add the steaks back into the pan. This is normally serve with pickles, chips and rice or pasta.
