I just opened my Season Supply vegetable box which comes to the office every Wednesday and thought 'I must make a delicious warming, healthy, gluten free soup!'.
Steps

Add finely chooped, leek, celery, carrot, onion and garlic to the olive oil and cook down until softening. About 15 minutes.

Add the chunks of potato and cook for a few minutes until they start to soften. Add the stock, the tin of tomatoes and the cabbage.

Simmer for 40 minutes, add salt, pepper and herbs to taste.

Serve while hot with a generous grate of parmesan cheese.
