Ingredients

  • Quiche
  • 1 Tbspbutter (softened)
  • 4eggs
  • 2 Cheavy or whipping cream
  • 3/4 tspsalt (reduce if using a saltier cheese like provolone)
  • 1/8 tspground nutmeg
  • 1/4 lbSwiss cheese (shredded or cut into small pieces)
  • Fillings (optional)
  • Pie Crust
  • 1 1/4 Cflour
  • 1/2 Cbutter (chilled)
  • 1/4 Cmilk

Steps

  1. 1

    Prepare pie crust. Cube cold butter and cut into flour until it resembles coarse crumbs. Add milk little by little.

  2. 2

    Roll out pastry and line a 9" pie plate.

  3. 3

    Preheat oven to 425° F. If adding fillings, prepare the filling(s).

  4. 4

    Drain greasy fillings on paper towel then crumble or cut up fillings. Spread in prepared pie crust.

  5. 5

    With whisk, beat eggs, cream, salt, and nutmeg. Stir in cheese.

  6. 6

    Pour egg mixture into crust. Bake 15 minutes; reduce temperature to 325° F for 35 minutes.

  7. 7

    Cake tester should come out clean when finished. Let stand 10 minutes before serving.
