Prepare pie crust. Cube cold butter and cut into flour until it resembles coarse crumbs. Add milk little by little.

Roll out pastry and line a 9" pie plate.

Preheat oven to 425° F. If adding fillings, prepare the filling(s).

Drain greasy fillings on paper towel then crumble or cut up fillings. Spread in prepared pie crust.

With whisk, beat eggs, cream, salt, and nutmeg. Stir in cheese.

Pour egg mixture into crust. Bake 15 minutes; reduce temperature to 325° F for 35 minutes.

Cake tester should come out clean when finished. Let stand 10 minutes before serving.
