Yam porridge
Africans are blessed with porridge meals and this here is one of my best
Steps
- 1
Peel the yam and cut into sizeable chunks
- 2
Wash and put in a clean pot
- 3
Add some diced onions, crayfish, salt, seasoning cubes, pepper, dry fish, beef (already steamed), palm oil and water (just enough to cover the yam)
- 4
Cover the pot and put it on fire.
- 5
Keep stirring periodically once the yam begins to boil (this will help you achieve the thick nature of the porridge)
- 6
Once the yam is soft and the paste is thick enough, then you can add the ugu leaves and bring down the porridge and it is ready to serve.
