Many northerners and even non northerners love the recipe.. I can say it's one of the top delicious food here in northern nigerian. Even though many people prefer to eat it with miyar taushe (a soup made with pumpkin) but I'm not a fan of taushe da masa😁.. So I decided to make it with cow leg soup! And it's absolutely delicious 😋😋

Ingredients

  1. White rice
  2. Active yeast
  3. Baking powder
  4. Sugar
  5. 1 pinchsalt
  6. Oil for frying
  7. For the soup you'll be needing :
  8. Fresh cow leg
  9. Scotch bonnet
  10. Cinnamon powder
  11. Black pepper
  12. Salt(optional)
  13. Grated onions
  14. Garlic + Ginger paste (optional)
  15. Seasoning spices
  16. Water

Steps

    You'll soak the white rice over night or for 8 hours, you then grind it and add the yeast. Cover the batter and keep it in a warm place to rise. When it rises, add the sugar, salt and baking powder and stir it. On your stove or oven, place the tanda (the masa fryer) on the heat, add some little oil and fry until it's slightly golden brown..

    For the soup I suggest you use a pressure pot, because the cow leg meat is too strong..

    Put the cow leg into a pressure pot (in the absence of pressure pot you can use any pot). The whole ingredients mentioned above then add water and cover the pot with lid.. Leave it to cook until the meat is soft.
