Ingredients

20-25 minutes
2-3 servings
  1. 2sweet potatoes
  2. 3 tsptamarind paste
  3. 4 tspsugar
  4. 1 tspghee
  5. 1/2 tspturmeric powder
  6. to tastesalt
  7. 1 tsppanch phutan
  8. 2red chillies
  9. 1 tspchopped ginger
  10. 10-12curry leaves
  11. Pinchasafoetida (hing)
  12. 1 tsproasted cumin-red chilli powder
  13. 2 tspgrated coconut
  14. 2 cupswater

Steps

20-25 minutes
  1. 1

    Wash the sweet potatoes, peel and cut into small discs.

  2. 2

    Take water in a pan. Add sweet potatoes, salt, turmeric powder and boil for 10-15 minutes.

  3. 3

    Add sugar, tamarind paste and let it cook for 3-4 minutes. Keep it aside.

  4. 4

    Heat oil in a wok. Add panch phutan, red chilli, ginger, curry leaves, hing and saute it for few seconds.

  5. 5

    Add boiled sweet potatoes and allow it to cook for 3-4 minutes on a low flame.

  6. 6

    Then add roasted cumin-red chilli powder and grated coconut. Turn off the flame.

  7. 7

    Thus ready to serve is the delicious sweet potato khata (chutney).
