Ingredients

  1. 2 Tbsvegetable oil
  2. 8 ozfresh white button mushrooms, sliced (about 3 cups)
  3. 1large clove garlic
  4. 1 Tbspchili powder
  5. 1 canchicken or vegetable broth (about 15 oz)
  6. 1 canstewed tomatoes (about 15 oz)
  7. 1 cankidney beans (about 15 oz)
  8. 1 cancorn kernels (about 7 oz)

  1. 1

    In a large saucepan heat oil over medium-high heat. Add mushrooms and garlic, cook stirring frequently until mushrooms are tender and liquid evaporates, about 5 minutes.

    Stir in chili powder, cook and stir 1 minute.

  3. 3

    Add chicken broth, stewed tomatoes, kidney beans and corn. Bring to a boil, reduce heat and simmer to blend flavors, about 10 minutes.

    Serve topped with tortilla chips, if desired.
