Wash meat and drain water,put aside.

Wash onions and dice

In a sufuria add 4 Tbsp of cooking oil,put all the red onions together with garlic ginger paste and cook till garlic ginger paste turns brown and red onion translucent

Add the pieces of beef on low heat and stir 3 mins, cover and let cook.keep checking and stirring not to stick at the bottom of sufuria

Cook till all water drains and only oil and beef is cooking.Add quarter cup boiling water to cook the meat till tender.

NB: I don't boil the meat to preserve the best taste.I fry it direct.

When well cooked add salt,stir.

Add pilau masala,tumeric and black pepper.stir to mix thoroughly.

Add diced tomatoes, cook till dissolved

Using the same cup that measures the rice,measure water(i use boiling water).for 1 cup of rice= 2 cups water.measure rice

Measure rice,wash and add to the beef mixture, stir well,taste salt.

On low heat cover and let cook till all water drains.

Serve with kachumbari
