Ingredients

4 servings
  1. 2 craw cauliflower, riced
  2. 2 Tvegetable oil
  3. 2 Tbell pepper, finely chopped
  4. 4 Tgreen onion, thinly sliced
  5. 1/2salad shrimp
  6. 1/2 tspminced garlic
  7. 3 Tsoy sauce
  8. 3eggs, beaten
  9. salt, optional

Steps

  1. 1

    In large skillet, heat oil. Add peppers and onion, cook 1 min.

  2. 2

    Add cauliflower, shrimp and garlic. Stir constantly until cauliflower is tender.

  3. 3

    Stir in soy sauce.

  4. 4

    Add eggs in one corner of skillet but don't stir for 1 min. As soon as eggs are soft-cooked, remove skillet from heat.

  5. 5

    Gently fold eggs into mixture. Season with salt or more soy sauce to taste.
