Easy and Budget-Friendly Enchiladas
For those surprise guests when you're on a budget. With ingredients you probably have at home, you can whip this up in no time.
Steps
- 1
Heat your all-purpose red sauce (recipe in my cookbook). It's very easy to make: https://cookpad.wasmer.app/mx/recetas/6478367
- 2
In a separate bowl, dissolve the 2 tablespoons of flour in a little water.
- 3
Strain the flour mixture into your sauce. Stir constantly and cook until the sauce thickens to your liking. Adjust salt to taste.
- 4
Crumble the cheese and finely chop the onion.
- 5
Heat oil in a pan. Lightly fry the tortillas in the oil, then dip them in the sauce. Fill each tortilla with cheese and onion.
- 6
Fold the tortillas and pour more sauce on top. Add more cheese or a little sour cream on top if you like. You can also use a melting cheese. Enjoy!
