Ingredients

Serves 4 servings
  1. For the Grilled Pork Chops:
  2. 4pork loin chops
  3. Shallots, garlic, lemongrass (finely chopped), seasonings, cooking oil
  4. 2 tablespoonssweetened condensed milk
  5. For the Egg Meatloaf:
  6. 4duck eggs
  7. 3.5 ouncesground pork (100 grams)
  8. 1 bundlecellophane noodles (bean thread noodles)
  9. 2-3wood ear mushrooms (black fungus)
  10. Shallots, green onion bulbs
  11. 2-3salted egg yolks
  12. Seasonings: fish sauce, black pepper, sugar
  13. For the Broken Rice:
  14. 1small amount of broken rice

Steps

  1. 1

    First, marinate the pork chops: Rinse the pork chops and pat dry with paper towels. Use a meat mallet to pound the meat thinner for better absorption. Place the meat in a bowl: add 1 tablespoon shallots and garlic, 1 tablespoon finely chopped lemongrass, 1 tablespoon fish sauce, 1 teaspoon sugar, 2 tablespoons sweetened condensed milk, and 1 teaspoon cooking oil. Put on food-safe gloves and mix everything well so the seasonings coat the meat evenly. For extra moisture, you can add a little fresh milk. Cover the bowl with plastic wrap and refrigerate for 2-3 hours (overnight if you have time).

    After marinating, remove the pork and scrape off the shallots and garlic. Grill the pork over charcoal (this prevents the aromatics from burning and sticking). You can brush the marinade onto the meat while grilling.

    Rinse the broken rice and cook it as you would regular rice.

    For the egg meatloaf: Rinse the ground pork and drain well. Place it in a bowl or a greased mold. Prepare a steamer with water, making sure the water doesn't touch the bottom of the bowl. Soak the wood ear mushrooms and cellophane noodles in hot water until soft. Finely chop the mushrooms and cut the noodles into 1-inch (2-3 cm) pieces. Finely chop the shallots and green onion bulbs.

    Crack the duck eggs into a bowl, reserving 1 yolk for later. Add the ground pork and chopped mushrooms. Add the chopped green onion bulbs and shallots, then 1 tablespoon fish sauce, 1 teaspoon sugar, 1 teaspoon salt, and 1 teaspoon black pepper. Mix well with chopsticks. Place 2-3 salted egg yolks on top for decoration. Steam until cooked through. Brush the reserved duck egg yolk mixed with a little annatto oil on top, then steam for a few more minutes.

    Once the egg meatloaf is cooked, let it cool, remove from the mold, and cut into pieces. It will still be quite moist at this stage.

    Grill the egg meatloaf pieces to dry them out. At restaurants, they often grill the whole loaf at once.

    Prepare some fish sauce and scallion oil. Scoop the cooked broken rice onto plates and top with the grilled pork and egg meatloaf. Done!
