Ingredients

40 mins
  • 2kgs Mussels
  • 1 teaspoonminced fresh garlic
  • 1 teaspoonminced ginger
  • zest of a lemon and a lime
  • juice of 1 lemon and half a lime
  • 1 teaspoonthai seasoning
  • 1 teaspoongarlic and herb seasoning
  • 3bay leaves
  • 1 teaspoontomato paste
  • 1chicken stock cube
  • 1 cupwater
  • 2 cupsdry white wine
  • to tastemushrooms
  • 1 cancoconut cream
  • to tastepepper
  • to tastesalt
  • to tastecoriander

Steps

  1. 1

    Clean mussels then leave them soaking in clean water before cooking

  2. 2

    Put garlic ginger onion zest in a big pot that has butter and oil heated and leave for a few minutes stir be careful not to burn the garlic

  3. 3

    Add wine and tomato paste cook out a bit then add seasonings stock cube bay leaves lemon and lime juice water and coconut cream

  4. 4

    Leave simmering for about 15 mins to reduce if it gets to thick thin it white a bit of water.
    Add mussels and toss every few minutes so they all cook evenly add coriander
