Fried egg with salad and chicken filling
Cooking Instructions

Slice all your vegetables, add mayonnaise and set aside
- 2
Break two eggs into a bowl and whisk until they harmonise
- 3
Fry with vegetable oil and when done, bring down and spread in a plate.
- 4
Add the salad on top and its ready to eat

They sell these sandwiches at a store at our local train station. I wanted to be able to eat as many of them as I like, so I tried making them myself. I like the fact that they're looks so colorful.The foundation of this sandwich is the egg and nanohana. After that, you can add and combination of ham, lettuce, tomato, shrimp or bacon.The sandwiches will have a nicer texture if you chill them in the fridge for a while, as the bread will absorb some of the filling.If you make the sandwiches at night, wrap up in plastic and chill in the refrigerator, then cut them and eat in the morning they will be really moist and delicious. To this day, my mom's pineapple and chicken macaroni salad remains one of my favourite dishes. It's just the right balance of sweet, fruity, tangy, and savoury, and hits the spot every time. Unfortunately, because she refuses to give me the recipe in anything other than broad strokes, I've had to guess how to make it. Some attempts turned out better than others, and thus far the recipe below has come out best. Funnily, it's not super-similar to my mom's (it's less sweet due to the omission of sweet relish, and crunchier due to the addition of nuts), but it is still really, really delicious, and makes a more than acceptable substitute when a mac salad craving hits.
