Ingredients

  1. 6 1/2 lbscooked cardoons (about 3 kg)
  2. 2 1/4 lbssmall meatballs (meat or vegetarian) (about 1 kg)
  3. Parmesan cheese, to taste
  4. Olive oil, to taste
  5. 3eggs
  6. Vegetable broth, to taste

Steps

  1. 1

    In a baking dish, layer cooked cardoons and meatballs as desired.

  2. 2

    Sprinkle a handful of grated Parmesan cheese over the top.

  3. 3

    Add another layer of cardoons, meatballs, and Parmesan cheese.

  4. 4

    Pour the beaten eggs over the top and drizzle with a little olive oil.

  5. 5

    Add a bit of vegetable broth.

  6. 6

    Bake for 30 minutes at 480°F (250°C).
