Ingredients

4person
  1. 3-4 cupvegetable stock
  2. 2green chillies chopped
  3. 1 tspginger grated (thai ginger)
  4. 1 tsplemon grass chopped (optional)
  5. 1 cuptofu cut into square piece
  6. 2 tbspspring onion chopped
  7. 1 tspsoya sauce
  8. 1 cupsliced mushrooms
  9. to tasteSalt
  10. 1 tspblack pepper powder
  11. 1/2 tsplemon juice
  12. 1 tbspgarlic finely chopped
  13. 3 tbspmix vegetable (carrot, beans cauliflower)
  14. 1 tbspcoriander leaves chopped
  15. 1 tbspbutter

Steps

  1. 1

    In big pan boiled vegetable stock add butter, mushrooms, garlic, ginger, vegetable, lemon grass, green chilli and tofu/paneer.

  2. 2

    Simmer till the vegetables are tender for five minutes.

  3. 3

    Add soya sauce, spring onion, black pepper powder and salt.

  4. 4

    Boil for a few more minutes. Adjust seasoning.

  5. 5

    Transfer in soup bowl and add lemon juice.

  6. 6

    Garnish with coriander leaves and serve hot.
